Friday, we made two strip cakes: a banana cake and another sponge cake. We started with the banana cake, which was a fairly simple recipe. This cake was very moist and soft. We then made the same sponge cake as the lab before, but left it as a sheet cake. The point of this lab day wasn't about making the perfect cake, but more so about icing and stacking the cakes. So, we cut both cakes into three long pieces. We iced each layer and stacked the cakes one on top of each other. This sounds fairly simple, however something was wrong with my icing... It kept melting and had a strange texture. I asked my instructor if something was wrong, and we found out that someone in another class had filled the icing sugar bin with regular sugar and mixed it in! This caused my icing to have a lower melting point and be grainy. I wasn't too happy about this. So, my cakes kept tilting over and were very very messy! I wasn't the only one with this problem, so my instructor took it into account while he was marking us. We were supposed to decorate the cakes with piping and other small things, but since my banana cake's icing was too runny and gross, I couldn't really do this. I moved on to the sponge cake hoping that it would go better. Luckily, the icing sugar was fixed and my praline icing turned out perfectly. I could properly ice my cakes without it being a total mess. They looked great! I even had the chance to decorate the sponge cake with piping and added nuts and chocolate. When my instructor came by to grade me, he liked my banana cake even though it was more than unattractive. He said that the cake was baked properly, so that was good! He also said that my sponge cake was iced well and decorated properly. I was glad to have at least one cake well done. Although it was not so pretty, the banana cake taste really good!! Even better than the sponge cake (which is always dry). Next week, we make quiches and have test days. So we will be making some of the same recipes as before on Wednesday and Friday, but will be tested on how well we made them. More cookies! More cakes!
