Friday was pie day! One of my favourite things :) We started by making two different kinds of dough- one that was more enriched with milk powder and more fat, and the other was a classic pie dough. Our first pie recipe was cherry. We separated the cherries from their juices and boiled the juice with sugar and other ingredients. It was fairly simple. Then we went on to roll out the chilled doughs and fit them in the pie pans. This was a little tricky since the dough tears easily. We went on to make the apple pies. We were making two different kinds- one with a streusel topping and the other with a double crust. This was also fairly easy, however it took a while to chop all the apples, toss them with cinnamon, flour, etc... These three pies all went in the ovens to bake. Then, we went on to the orange chiffon pie. This was a more complicated recipe. The pie shell was baked earlier since the filling cooks on a burner. The filling contained gelatine, and so it was finicky and needed to be watched carefully while it cooked and cooled. Luckily, my orange chiffon pie turned out great! In fact, my instructor said it was better than his :) All my pies turned out fabulously and they looked great! However, something always has to go wrong with me... I was about to leave the building after making these four beautiful pies and I'm carrying all of them at the same time. What happens? I slip and fall. ALL MY PIES FALL WITH ME and the majority of them got a little squished. I was so upset! After five hours of working on these beautiful pies, I mess them up in a split second. GAH! I wasn't too happy. Thankfully, I brought them home and they still tasted fine. Tomorrow we continue with the pie making, and I promise not to slip and drop them!
